The "Reconquest of the Tap" in Italy

The Italian cities of Milan, Rome, and Florence are among those trying to re-educate their residents to use tapwater rather than bottled water. In Milan, city officials proposed to equip public fountains with sparkling mineral water.

 

In Florence, schools and city offices now supply glass coolers filled with tapwater instead of bottles of mineral water. Giovanni Pastore of the National Research Institute for Nutrition and Foods (INRAN) said that while taste was a big factor in people's preferences, the quality of Italy's tapwater was, in general, just as strictly monitored as that of bottled water. The tang of chlorine in public water, he said, could be minimized by aerating the water or boiling it briefly before drinking it.
